13 Recipes for GALANTINE’S Brunch
With 40 years of hosting experience, here are my favorite 13 dishes for your Galantine’s Brunch and tips on how to entertain with confidence.

How to plan a brunch with confidence:
- Decide your invite list and send out invitations
- Pick a menu- choose 2 dishes to make from scratch, dishes to have your friends bring to the party and a couple of items to pick up from the store or order.
- Plan your cocktails and beverages carefully. Consider your gal pals that are not drinking alcohol. See my post about top champagnes under $100. I list some great award winning N/A options.
- Select your theme- Pink Pony Club, Barbie Brunch, Flower Punch, Old Money High Tea, Coastal Grandma Bridge Party- whatever it is, let your food reflect the theme and share with your guests.
- Set your table 3 days before the event.
- Order your flowers from a local florist.
- Grocery shop 7 days before the event.
- Make anything in advance you can and freeze or chill.
- Don’t forget to buy extra ice.
- Pick out what you are going to wear, plan time for self-care, make-up and don’t forget that nail appointment.

A few great dishes for your brunch:
- Buttery Baked Pineapple Gratin . This classic Southern dessert or side dish goes so well with a salad, ham or even a light pasta dish. It is super easy to make and assemble before the event. Just bake right before your guests arrive.

2. Classic Blueberry Lemon Tea Cake= This easy as pie, tea cake would be perfect for a High Tea, light dessert or to serve on the side with a big entree salad. Bursting with bright lemony flavor and fresh plump blueberries, this lemon blueberry tea cake will hit all the right notes at your brunch.

3. Pimento Cheese – Stay with me. Coastal Grandma will love this incurable pimento cheese AND you can make it a day or two before your brunch. It is fantastic on fancy white bread or served with buttery crackers. Goes great with my Azalea Cocktail.

4. Broccoli Blueberry Salad – It wouldn’t be Bruch without a big fresh salad. This updated broccoli blueberry salad is packed with antioxidant rich walnuts, berries and greek yogurt. Healthy and delish.

5. A large bowl of mixed berries. Serve in a silver bowl with fresh mint. The colors alone make it glamorous. No recipe required. What is more magical than a platter teeming with fresh berries dotted with mint leaves? This would be the perfect dish to ask your friend who does not cook to bring to the party.

6. Shrimp, Feta and Orzo Salad – another uber healthy dish that will wow your friends. Bright pink shrimp, orzo, bright herbs, chopped olives, cucumbers, and feta. So good.

7. No Bake Key Lime Tiramisu– One of my most popular recipes- make ahead and portable. This dessert is one of my most popular recipes and for good reason. It is sweet tart, and so different but an absolute showstopper.

8. The Classic Cosmo- Pick up these bottles from the hardware store and be a mixology hero . This cocktail can be made ahead, transported and is SO devilishly good. Serve in the most beautiful glasses you can find with fresh mint or a slice of citrus peel.

9. Party Spinach Dip– This is a classic recipe but with a spicy kick. Another make ahead hero, perfect for a guests to bring or to make a day or two ahead and serve with chips, veggies or on crostini.

10. Meggen’s Chicken Salad– This is my classic chicken salad that I have perfected over years and years of serving luncheons, brunches and parties. It never disappoints and everyone will ask you for the recipe.

Setting a beautiful table:
I probably spend as much time planning my table as I do my menu. Some places I look for inspiration are Addicted to China, Katherine Young Home, Victoria Magazine, The Top Montana, Scot Meacham Wood Home, and Alison and the Polohouse. If you are ready to host a brunch, you are ready to begin collecting beautiful china, silver and glassware. Look for great bargins at Live Auctioneers, EBay, and Facebook Marketplace.

11. Pistachio Cake with Cream Cheese Frosting – This beautiful recipe can be made a day ahead and kept in the fridge. Pop out and let come to room temperature one hour before your friends arrive.

12. Citrus Salad with Burrata and honey-lime dressing. – Winter is citrus season. These beautiful Vitamin C slices are easy to serve and require almost no prep work.

13. Overnight Kale and Sausage Strata: It wouldn’t be a brunch without an egg dish. Another “easy to assemble” overnight dish is this egg casserole. Make certain you take it out at least an hour before your guests arrive and give it a full hour to bake.
