Blackberry Champagne Cocktail

What is a Blackberry Champagne Cocktail?

Unlike the very posh and proper Kir Royale- a champagne cocktail made with cassis, this drink combines pureed pomegranates, blackberries, and raspberries with a touch of mint and stevia (or sugar) topped with champagne. Stir and serve with skewered berries for a very thirst quenching drink.

This is the drink for when you want your champagne but really need those antioxidants.

Ingredients in this Champagne Cocktail:

  • blackberries
  • raspberries
  • pomegranates seeds ( also knows as arils)
  • mint
  • sugar or stevia
  • champagne
  • ice

How to make this Blackberry Champagne Cocktail:

Pull out your high speed blender, throw in a bunch of berries, pomegranate seeds, a teaspoon or more of sugar, 2 mint leaves and give it a whirl. Add to a glass crushed ice, pour in the berry puree and top with those bubbles.

You can strain out the seeds, but that will take a while- I don’t have the patience, but if you want a completely smooth purée, strain away.

Pro-tips when making champagne cocktails:

  1. This is a perfect cocktail to make with day old champagne that needs a little lift.
  2. Use a dry less expensive champagne like Kirkland or a Chandon. Save your money for the good stuff when you enjoy just a glass of bubbly.
  3. Frozen fruit works beautifully, and will help chill the beverage.
  4. Do not use dried mint. Only fresh.
  5. You can use sugar, stevia, monk fruit or almost any sweetener. Brown sugar is too grainy.
  6. I love a tall glass or stemless wine glass for this cocktail. It adds so much drama.
  7. Don’t forget to garnish.

Ingredients

  • 8 oz French champagne or sparkling wine chilled
  • 1 cup blackberries, divided- save 6 berries for garnish
  • ½ cup raspberries
  • 1 TBSP pomegranate seeds
  • mint leaves and stems for garnish
  • crushed ice
  • 2 tsp sugar or stevia

Instructions

  • In a high power blender, puree blackberries, raspberries, pomegranate seeds, 2 mint leaves and sugar until liquidifed.
  • To Burgundy wine glasses add crushed ice, 1/2 the berry puree and top with champagne.
  • Garnish with sprigs of mint and a skewer of blackberries
