Watermelon Fresca with Rum

Looking for something to do with all that leftover watermleon from your recent picnic? I have a fantastic recipe for you. Watermelon Aqua Fresca.

It is a Mexican drink combining melon, sugar, lime and water. My version uses strained watermelon juice that I blend in my Ninja blender, a mint infused simple syrup, fresh lime juice, and a splash of rum or vodka or tequila. Pour over ice and you have summer in a glass.

Keep a pitcher of it in the fridge ( sans alcohol) and enjoy on hot days or after a workout. Buen Provecho!

Watermelon, simple syrup, mint, limes, and a good white rum (or vodka ) are all that’s needs for the most refreshing summer drink.

Watermelon Fresca with rum

  • 8 cups cubed watermelon

  • 1/2 cup sugar

  • 1 cup water

  • Juice of three limes

  • limes slices

  • fresh mint

  • 1/2 cup white rum, vodka or tequila

  • ice cubes

Chop up the watermelon and blend until liquid.

Method- Makes 1 pitcher of cocktails

  • In small saucepan, combine the water and sugar. Add mint leaves if desired. Bring to a simmer until sugar is dissolved. Set aside to cool. Remove mint once cooled. Keep in a jar in the fridge for up to three weeks.
  • In a blender, pulse watermelon until liquified. Place a strainer over a large bowl of wide mouthed pitcher. Stained juice from pulp and seeds. Throw away pulp. You should have about 3-4 cups of juice.
  • In a large pitcher, combine melon juice, simple syrup, lime juice and liquor. Serve over ice with a sprig of mint or lime wheels to garnish.
Strain out the pulp and seeds. Chill the liquid.
Simple syrup is a staple of summer cocktails. Make your own for pennies and infuse with citrus, herbs or vanilla beans and store in the fridge.
Garnish with mint and lime or lemon slices- or both!
