Bacardi Watermelon Aqua Fresca With Rum

Ingredients

  • 8 cups cubed watermelon
  • ½ cup sugar
  • 1 cup water
  • Juice of three limes
  • limes slices
  • fresh mint
  • ½ cup white rum, vodka, or tequila
  • ice cubes

Instructions

For the Simple Syrup:

  • In a small saucepan, combine the water and sugar. Add mint leaves if desired. Bring to a simmer until sugar is dissolved. Set aside to cool. Remove mint once cooled. Keep in a jar in the fridge for up to three weeks.

For the Agua Fresca:

  • In a blender, pulse watermelon until liquified. Place a strainer over a large bowl of wide-mouthed pitcher. Stained juice from pulp and seeds. Compost or toss pulp. You should have about 3-4 cups of juice.
  • In a large pitcher, combine melon juice, simple syrup, lime juice, and liquor. Serve over ice with a sprig of mint or lime wheels to garnish.

Notes

Simple syrup is a staple of summer cocktails. Make your own for pennies and infuse with citrus, herbs, or vanilla beans and store in the fridge.
