A refreshing cocktail made with sweet watermelon, tart lime juice, simple syrup, and clean light rum served over ice and garnished with mint and lime slices
In a small saucepan, combine the water and sugar. Add mint leaves if desired. Bring to a simmer until sugar is dissolved. Set aside to cool. Remove mint once cooled. Keep in a jar in the fridge for up to three weeks.
For the Agua Fresca:
In a blender, pulse watermelon until liquified. Place a strainer over a large bowl of wide-mouthed pitcher. Stained juice from pulp and seeds. Compost or toss pulp. You should have about 3-4 cups of juice.
In a large pitcher, combine melon juice, simple syrup, lime juice, and liquor. Serve over ice with a sprig of mint or lime wheels to garnish.
