Knorr Veggie Spinach Dip

This classic veggie spinach dip using Knorr Seasonings is made even better with a few fresh ingredients that add so much kick.

Who doesn’t love Veggie Spinach Dip?!

My updated version of the classic “Vegetable soup mix dip” adds a punch of flavor by adding 2 heaping teaspoons of fresh horseradish and three spices including a dash of heat from cayenne pepper. I also use fresh green onions, mayonnaise, sour cream and greek yogurt for an extra creamy and super tangy dip. Give my version a try and you will never eat that same old tired spinach dip again.

Ingredients for Knorr Veggie Spinach Dip:

  • Knorr Vegetable recipe Mix- look for it on the soup aisle or buy HERE
  • mayonaise
  • sour cream
  • full fat greek yogurt
  • fresh horseradish
  • green onions
  • water chestnuts
  • frozen chopped spinach
  • garlic powder, onion powder, cayenne pepper, kosher salt, smoked paprika,

Variations to this recipe:

  • Add 2 cups of drained and chopped artichoke hearts.
  • Stir in 1 cup olive tapenade for a Mediterranean taste.
  • Combine artichoke heats, 1/2 cup parmesan cheese and bak fro 30 minutes at 325 degrees for a fantastic hot dip. Perfect for game day watch parties when it’s chilly outside.
  • Stuff inside a chicken breast cut in half lengthwise and bake for a fantastic stuffed chicken dinner.
  • Add the dip to a baking dish with 1 cup rice, sprinkle with 1/4 cup panko and 1/4 grated parmesan and bake at 350, covered for 30 minutes, for a great casserole.

Commonly Asked Questions:

Can I make this ahead?

YES! This dip is actually better if made about 8 hours in advance. Keep it covered in the fridge in an airtight container. If it gets watery, add in a bit more mayo or try and drain off any liquid.

Can I use plain yogurt instead of Greek?

Plain yogurt has too much liquid and will make for a soggy dip. Greek yogurt that is super thick is best. You can omit the yogurt and just use mayo and sour cream, but the tang from yogurt adds a ton of flavor and protein. You can drain off the water form the yogurt by straining it overnight in a fine sieve lined with cheesecloth- although, it’s probably easier just to buy Greek yogurt

My dip is very watery. What did I do wrong?

Did you drain the spinach really well.?That is typically the “liquid” issue. Did you measure your mayo, Greek yogurt and sour cream correctly? Did you use plain yogurt instead of Greek yogurt? Greek yogurt is much thicker and contains less water.

Where do I find “fresh” horseradish?

Look for it in the refrigerator section of your produce department or in the seafood case? It will be in a jar. Shelf stable horseradish does not have that “heat” that you want.

I’m allegeric to dairy. Any substitutions?

This is a very Dairy-centric recipe. I think you might love my roasted salsa verde- it’s completely dairy-free.

A zesty fresh dip made with a trio of greek yogurt, sour cream and mayo, herbs and spices, horseradish plus Knorr veggie mix. A 2 TBSP serving has 120 calories.

Ingredients

  • 2-10 oz bags frozen spinach, thawed & drained

  • 1 envelope Knorr, Vegetable Recipe Mix- found on the soup aisle

  • 1 cup mayonnaise

  • 1 cup sour cream

  • 1 cup plain full fat Greek yogurt

  • 2 TBSP (heaping) fresh horseradish

  • 1/4 cup finely chopped green onions

  • 8 oz can water chestnuts, drained & chopped fine

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cayenne pepper or more to taste

  • 1/2 tsp kosher salt

  • dash smoked paprika

  • tortilla chips, for serving

Directions

  • Squeeze all of the water from the spinach through a fine mesh sieve. Set spinach into a large mixing bowl. “Fluff” the spinach with a fork.
    Add in the Knorr seasonings, green onions, horseradish, water chestnuts and remaining ingredients through salt.
  • Stir everything well until completely incorporated. Cover and chill for 2 hours or up to overnight.
  • Sprinkle with a few dashes of smoked paprika and garnish with flat leaf parsley or green onion tips. Serve with tortilla chips.
  • Store any leftover dip, covered, in the fridge up to 3 days. The dairy products will begin to breakdown so stir to re-incorporate before serving.

Notes

  • It is very important to remove as much moisture from the frozen spinach as possible.
