
Welcome to Dry january 2022 . I thought instead of a boozy start to the month, I’d give my liver a rest and a re-boot. I would make something full of yummy, but very healthy things.
Melons are not in season right now, but you can find frozen honeydew and what could be more refreshing duringhte dark winter months than a beautiful honeydew with cucumber, ginger and fresh, tangy lime juice?
I whipped up this drink in under 15 minutes including chopping time.
Instead of a simple syrup, the drink is sweetened with a touch of agave. Yes- it would be amazing with tequila, so if you really need that cocktail- feel free to indulge.

Cucumber Melon Aqua Fresca
6 cups cubed honey dew melon- about one large melon
4 cups peeled and chopped cucumber- about 2 medium cucumbers
2 TBSP fresh ginger, minced
2 TBSP agave
1/2 cup fresh lime juice
basil plus extra for garnish
mint plus extra for garnish
ice

Method- total time 15 minutes. Serves 3
- Place cucumbers, melon, agave, ginger, lime juice and a large sprig of basil & mint in a heavy duty blender such as a Ninja.
Process until smooth. - With a mesh sieve, strain solids from liquid reserving the liquid in a large pitcher.
- Pour liquid into glasses filled with ice. Garnish with extra basil, mint or a thin slice of cucumber.
