Welcome to the final day of Vegetarian Week. I thought instead of a boozy send off, I would make something full of yummy, but very healthy things.
Melons are in season right now and what could be more refreshing than a beautiful honeydew with cucumber, ginger and fresh, tangy lime juice?
I whipped up this drink in under 15 minutes including chopping time.
Instead of a simple syrup, the drink is sweetened with a touch of agave. Yes- it would be amazing with tequila, so if you really need that cocktail- feel free to indulge.
Happy Friday everyone!
