Creamy Chocolate Mousse- KETO & Dairy free

Let’s face it, trying to lose weight when you are a woman of a certain age…stinks. It is hard. Forget bread, wine or dessert. It’s protein, double veggies and tons and tons of water. Oh – and don’t forget your 10,000 steps, weight training and cardio. We’ve all got time for that, right?

But what if I told you, I found a recipe for a decadent dessert that will not cause you to double up on your Spanx? Trust me, ladies, it’s true. KETO- non dairy chocolate mousse. Okay, it’s not really mousse- no eggs, but it is whipped, frothy, chocolate heaven. Don’t tell your Hubbie it’s healthy for him. He’s better off not knowing.

Yes my darlings- this is a KETO dessert

Ingredients

  • 2 cans 13.7 oz full fat coconut milk, chilled in fridge for at least 24 hours

  • 2 TBS confectioners sugar or Stevia if counting carbs

  • 2 TBS unsweetened cocoa powder

  • 1/2 tsp vanilla extract

  • pinch of sea salt

  • Whipped cream or Dark chocolate bar shavings for topping- optional

Directions

  • Open the cans of chilled coconut milk and scrape off the hardened white top. It looks like Crisco. Save the liquid in the can for another use. Place chilled hardened milk solids in the bowl of a chilled stand mixer.
  • Add sugar or Stevia, vanilla extract and pinch of sea salt to coconut mixture in bowl of stand mixture and whip on medium high for 2-4 minutes until mixture is light and fluffy like whipped cream.
  • On low speed, fold in cocoa powder into whipped coconut milk and blend until throughly mixed.
  • Spoon into small serving bowls. Best if chilled at least 2 hours. Top with whipped cream or dark chocolate shavings before serving. Shhh- Don’t tell folks it’s KETO.
You need FOUR ingredients- that’s it.
This is not Crisco Ceila Rae, It’s chilled Coconut milk .

I like to add a bit of whipped cream or chocolate shavings to dress up the mousse. Feel free to adjust the sugar. Everyone has different taste buds so you may want a bit more or less sugar.
