Sugar Free Strawberry Sauce
I developed this recipe out a the desire to ramp of the taste of my KETO pancakes. Instead of drowning the pancakes with calorie laden maple syrup, I opted for a sugar free and much healthier option: fresh berry sauce. This recipe can be whipped up in just a few minutes making it perfect for breakfast. But- it keeps well in the fridge for days. You can use to top:
Oatmeal
Yogurt
Ice cream
Fresh Fruit
As a base for a strawberry daiquiri
Strawberry shortcakes
As a low calorie substitute for jam
You only need four ingredients: water, strawberries, granular stevia and orange zest. Cook everything up in a saucepan, process until smooth in a blender and serve. It is fantastic served warm or cold. Strawberries are plentiful in Florida right now, so grab some at the store today and whip up this strawberry sauce and enjoy all weekend.
Sugar free strawberry sauce
3 cups strawberries, washed, stems removed and hulled
1/2 cup water
1 heaping tsp orange zest
2 TBSP granular stevia
Method, Prep time- 5 minutes. Cook time- 10 minutes
- Chop strawberries into quarters.
- Place all ingredients in a sauce pan over medium high heat. Bring to a boil. Skim any foam off the top. Reduce to a simmer and let berries cook for 5 minutes.
- Carefully pour hot berry mixture into a blender and process or pulse until smooth. Maybe – 3-4 pulses. Serve warm over pancakes or oatmeal. Place into a sterilized jar and keep in the fridge up to 5 days.
