How to make Sugar-Free Strawberry Sauce:

Chop the strawberries. Place strawberries, water, lemon zest and or juice and stevia into a saucepan. Bring to a boil. Skim off any foam. Place a blender or food processor and process until smooth. Store in an airtight container in the fridge for up to 1 week.

How to use Sugar-Free Strawberry Sauce:

  • On your morning oatmeal
  • In place of maple syrup on pancakes or waffles
  • On ice cream or banana splits
  • In a smoothie for extra strawberry flavor
  • Pour over a bowl fresh fruit like nectarines, peaches or other stone fruits.
  • On strawberry shortcakes in between the biscuit layers
  • As a low calorie substitute for jam on your croissant or English Muffin
  • As a base for a daiquiri

I developed this recipe out a the desire to ramp up the taste of my KETO pancakes. Instead of drowning the pancakes with calorie laden maple syrup, I opted for a sugar free and much healthier option: fresh berry sauce. This recipe can be whipped up in just a few minutes making it perfect for breakfast. It keeps well in the fridge for days.

You only need four ingredients: water, strawberries, granular stevia and orange or lemon zest. Cook everything up in a saucepan, process until smooth in a blender and serve. It is fantastic served warm or cold. Strawberries are plentiful in Florida in the early Spring and late summer in the Northwest. So there are always strawberries to be enjoying.

Substitutions you can try using this sauce:

  • Pour in Grand Mariner or Cointreau (off heat) to zhuzh up the sauce.
  • Add in 1-2 TBSP of orange juice or lemon juice for a bit zestier & fresher flavor
  • Stir the sauce into plain greek yogurt, chill and serve for a KETO friendly delicious dessert
  • Add in regular granulated sugar instead of Stevia
  • You can use raspberries, blackberries, cherries ( they will darken) or blueberries instead of strawberries
  • Frozen fruit works well. You may need to add a bit less water and more lemon zest

A delicious, versatile and super simple sauce made with only 4 ingredients- fresh berries, citrus zest, water and stevia.

Ingredients

  • 3 cups strawberries, washed, stems removed and hulled

  • 1/2 cup water

  • 1 TBSP lemon or orange zest (heaping)

  • 2 TBSP granular stevia

Directions

  • Chop strawberries into quarters.
  • Place all ingredients in a sauce pan over medium high heat. Bring to a boil. Skim any foam off the top. Reduce to a simmer and let berries cook for 5 minutes.
  • Carefully pour hot berry mixture into a blender, food processor or use an immersion blender and process or pulse until smooth. Just 5-6 pulses. Place into a sterilized jar and keep in the fridge up to 5 days.
