Cucumber Gin Tonic

Looking for a refreshing, fizzy cocktail that’s not too sweet and not too bitter? Try this cucumber-infused gin, lemon simple syrup topped, tonic water- Cucumber Gin Tonic.

A smooth cucumber gin tonic:

I originally made this drink with vodka, but gin is, of course, the perfect spirit to pair with tonic water.

And this vodka bottle is gorgeous and is begging for a photograph – so there.

Using farm-crafted award-winning Prairie Gin, I infused it with strips of cucumber. Then I made a simple syrup with long, fragrant lemon peel and topped the whole thing off with tonic water, a few cucumbers, and a pinch of mint. So refreshing. Give it a try. To make a vodka soda, just swap out the gin for vodka and soda water- Topo Chico makes a great pairing with cucumber.

Ingredients in a Cucumber Gin Tonic:

  • gin or vodka
  • cucumbers
  • lemon-infused simple syrup (lemon, water, sugar)
  • tonic water (or soda)
  • mint
  • ice

*How to make Lemon Simple Syrup:

*Place several large strips of lemon peel in a pan with 1 cup of water and 1 cup of sugar. Simmer until sugar dissolves. Let cool for 1 hour. Once cooled, remove the lemon peel. Chill syrup in a jar until needed. This syrup keeps in the fridge for up to 1 month.

Ingredients

  • 6 oz gin or vodka
  • ½ cucumber, peeled u0026 sliced into rounds
  • ½ cucumber sliced in 1/4′ strips lengthwise
  • 3 oz lemon infused simple syrup*
  • Ice
  • 12 oz Tonic water ( use soda water if using vodka)
  • Fresh mint

Instructions

  • Place cucumber rounds in 6 oz of gin or vodka. Chill for at least 2-3 hours.
  • Before mixing, remove the cucumber from the alcohol- set aside for garnish. In a martini shaker, add ice, 1 oz of simple syrup, and 2 oz of the cucumber-infused alcohol. Shake for 30 seconds or until the shaker is frosted over.
  • Pour into a glass filled with ice, the shaker mixture, and top with tonic water. Garnish with strips of cucumber, the gin-infused cucumber rounds, and a pinch of mint. Serve chilled.
