Ginger Mint Mojito- Zero Carbs

Yes, you read that correctly. A zero-carb mojito. Actually, it’s not really too difficult because, for starters, rum has no carbs and no sugar and only 96 calories per 1.5 ounces.

BTW-I love my job.

A traditional mojito will have a simple syrup, mint, limes, some tonic water, and rum. That’s about it- so getting to zero carbs is pretty easy. I rely on my old friend, Stevia. You only need a dash of it.

And I have two other secret ingredients- a wedge of fresh ginger, (I know- if you don’t like ginger, you should probably stop following my blog), and grapefruit sparkling water. Why grapefruit? Well, it’s winter. I love citrus. It sounds so fresh to add grapefruit and Topo Chico just came out with flavored waters- so I’m all in with grapefruit this week.

This cocktail takes about 3 minutes to make- just muddle a wedge of freshly peeled ginger with mint leaves, a slice of lime or two, and a dash of granular stevia. The grains from the stevia help break up the mint and fibrous ginger. And does it ever add a ton of flavor!

Top the muddled mess with 1.5 ounces of rum and ice. Shake until well chilled, strain, pour over ice, and top with sparkling water. It is refreshing. It is tasty. And it just screams- weekend!

You can find Topo Chico at most Safeway and Publix grocery stores. However, any variety of sparkling water will do.

Ingredients

  • 1 -2 stems of fresh mint, reserve one stem for garnish
  • 1 2-inch piece of ginger root, peeled
  • 3 -4 lime wedges, reserve 2
  • 1 tsp granular stevia
  • 1 6-8 oz grapefruit-flavored sparkling water, We like Top Chico. Buy it here.
  • 1.5 oz rum
  • ice

Instructions

  • Place lime wedges, ginger root, and leaves from 1 stem of mint into a cocktail shaker. Add 1 tsp stevia. Muddle well until ginger breaks down a bit and juices are released from mint leaves and lime.
  • Pour 1.5 oz of rum over the mint mixture. Top with ice. Cover with shaker top and shake until shaker becomes frosty.
  • Strain the contents of the shaker and pour over a highball glass filled with ice. Top with sparkling grapefruit water. Garnish with ginger root, lime wedge, and reserved mint leaves.
