
Back in the day when my girls were rowing crew in school, I used to make these great little oatmeal bites for a quick burst of energy during regattas. To be be perfectly honest, I love them just for myself.
They are a great little bomb of sweetness packed with raw oats, wheat germ, toasted coconut, dark chocolate chips, raisins and walnuts. They stick together by adding peanut butter and honey. So darn good. Keep them in the fridge and they will last for days. These bites are perfect for the busy holiday season when you need a little afternoon pick me up. And best of all, no baking!

Peanut Butter Oatmeal Energy Balls -makes approximately 20 balls
2 cups UNCOOKED old fashioned oats
1 cup shredded coconut- toasted
1 cup creamy peanut butter
1/3 cup honey
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup dark chocolate chips
1/2 cup wheat germ or flaxseed meal
1/2 tsp kosher salt
1/2 tsp cinnamon

Method- Prep time- 20 minutes, Cook time- 0 minutes, yield- 20-25 bites
- Mix all the ingredients in a large bowl and stir well until thoroughly combined.
- Chill for 10 minutes.
With a small scooper, scoop the mixtureand roll in your hands to create balls. Place on a rimmed tray lined with parchment paper. Chill for 30 minutes. Store in the fridge in an airtight container.
Bites last up to 1 week in the fridge. - If mixture does not come together, add a bit more peanut butter. If it is too “wet”, add in more wheat germ or oatmeal.
