Blackberry Pom Smash

This is the drink for when you want your champagne but really need those antioxidants.

Does drinking champagne undo the goodness of pureed blackebrries, raspeberries and pomegranates?

I really don’t want to know.

Pull out your high speed blender, throw in a bunch of berries, pomegranate seeds, a teaspoon or more of sugar, 2 mint leaves and give it a whirl. Add to a glass crushed ice, pour in the berry puree and top with those bubbles.

Blackberry Pom Smash

  • French champagne, chilled

  • 5-7 blackberries, plus a few extra for garnish

  • 4-5 raspberries

  • 1 TBSP pomegranate seeds

  • mint leaves, and stems for garnish

  • crushed ice

  • 2 tsp sugar or stevia

This is a perfect cocktail to make with day old champagne that needs a little lift

Method- Makes 2 cocktails

  • In a high power blender, puree blackberries, raspberries, pomegranate seeds, 2 mint leaves and sugar until liquidifed.
  • To Burgundy wine glasses add crushed ice, 1/2 the berry puree and top with champagne.
  • Garnish with sprigs of mint and a skewer of blackberries
