Sheet Pan Autumn Roasted Vegetables

This simple recipe is the easiest way to get your family to not only eat their veggies, but LOVE thier veggies. Delicata squash is that funny little green and yellow striped vegetable you see every fall.

Just slice it lengthewise, seed it and slice into half moons. The skin becomes cripsy and the inside becomes sweet and tender. Throw on a sheet pan with cauliflower and broccoli florets, coat with olive oil and a few warm spices and roast for 30 minutes.

SO good!

Be sure to use a rimmed sheet pan and parchment paper for super easy clean up.

Be sure to have a very sharp knife when slicing the squash- it’s a tough little devil.

I LOVE delicata squash

Ingredients- serves 4

  • 1 head cauliflower, washed and cut into florets

  • 1 head broccoli cut into florets

  • 1 delicata squash, seeded, cut in half circles – leave the skin on

  • 2 TBSP olive oil

  • 1/2 tsp kosher salt

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • 1/2 tsp Trader Joe’s smoke seasonings mix – or red pepper flakes and cayenne pepper

  • 2 tsp raw honey

Method- Prep time 15 minutes, Baking time 30 minutes

  • Pre heat oven to 425 degrees. Line a rimmed baking sheet with parchment paper.
  • In a large bowl, combine oilve oil, all spices and honey. Whisk well to combine. Add the veggies to the bowl and stir to completely coat the vegetables.
  • Place vegetables on the prepared pan and roast for 25-30 minutes or until the edges of the squash are golden brown. Do not burn.
    Serve hot.
A little drizzle of local raw honey helps carmelize the veggies
