Dinner in under 30 Minutes: One Skillet Peppers & Sausage

I promised you simple skillet suppers this year so let’s kick off the month with a one pan dish that is ready to serve in 30 minutes.

All you need is a sharp knife, peppers, onions, kale, parmesan cheese and a pile of sausage or kielbasa.

I used spicy turkey sausage from the grocery store- nothing fancy.

Remove the casings. Brown them up with a splash of olive oil, add in the peppers and onions, some red pepper flakes, a splash of water- cook.

Then top if off with fresh kale and a sprinkle of parmesan. It’s a skillet full of comfort when you need it most and you need it fast.

One skillet peppers & sausage dinner

  • 1 orange bell pepper, seeded and sliced

  • 1 red bell pepper, seeded and sliced

  • 1 red onion, sliced

  • 1 bunch Kale, spines removed and torn into large pieces

  • 1/2 tsp red pepper flakes
    1/2 tsp fennel seeds

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 cup water or white wine or chicken broth

  • 20 oz. ( about 5 large links) Italian sausage -use pork, chicken, turkey – casings removed

  • 1/4 cup parmesan cheese

  • 1 tsp olive oil

Directions

  • In a large skillet over medium high heat, add 1 tsp of olive oil to the pan. Crumble and sauté the sausage until browned and fat is rendered. Remove sausage and set aside to keep warm. In sausage fat, cook onions, peppers until softened. Add in garlic, fennel seeds, salt, pepper and red pepper flakes . Sauté one minute more.
    Pour in water, wine or broth and cook until veggies are well coated.
  • Add crumbled sausage back into the pan.
    Stir in kale.

    Sprinkle with parmesan cheese.

    Serve hot over cooked pasta or rice or just alone.
