In a large skillet over medium high heat, add 1 tsp of olive oil to the pan. Crumble and sauté the sausage until browned and fat is rendered. Remove sausage and set aside to keep warm. In the sausage fat, on medium heat, cook onions, peppers until softened - about 3-4 minutes. Add in garlic, fennel seeds, salt, pepper and red pepper flakes . Sauté one minute more.
Pour in water, wine or broth and cook until veggies are well coated.
Add crumbled sausage back into the pan.
Stir in kale. Cook for one more minute.
Take the pan off the heat. Sprinkle with parmesan cheese.
Serve hot over cooked pasta or rice or just alone.
