Wine Review- 2018 Unleashed Sparkling Rosé by Wit Cell
“Unleashed”, a very special Sparkling Rosé, 100% Syrah, produced by Wit Cellars in Woodinville, Washington. If you have never been to the tasting rooms just north of Seattle, put it on your to do list. Woodinville is surrounded by beautiful homes, horse farms, road stand flower markets and fantastic dining. With the Northern Cascades looking down on the valley, very special wineries come out of the region .
Welcome to another Friday Cocktail hour- it’s summer and I don’t know about you, but I just want to pop open a bottle of something bubbly and crisp and sit back and enjoy my afternoon. Mixing cocktails is all fun and good, but let’s face it- sometimes a girl just wants a glass of wine.
I discovered “Unleashed” while researching wines to serve at our daughter’s wedding two weeks ago. Because my daughter and her husband live in the Seattle area, I wanted to provide a selection of exceptional Washington State wines to honor their new home.
Wit Cellars sparkling rosé is a platium award wining wine.

The bubbles are tight and fragrant and the wine drinks exceptionally well on its own or try it this weekend with a light summer green salad of fresh goat cheese and pistachios . It is bold enough to pair well with even a bleu cheese. It was the perfect sipping rosé for an outdoor summer wedding- creamy and cool and with those beautiful bubbles it is celebratory without being too fussy or sweet like some champagnes.
