You wouldn’t know it to look at it, but my green Goddess Dressing is so healthy, you’ll want to start slathering it on everything you eat.
I use Italian Flat Leaf Parsley as my base, add in Greek yogurt (no mayonaise or sour cream), avocado and fresh lemon juice. Sprinkle in some salt and pepper, give it a whirl in the food processor or the Ninja Blender and you are set. It is that simple. I love to make this recipe when I have an avacado that is just too mushy for a salad or I have a tub of Greek yogurt that I need to do something with other than make overnight oatmeal. .
You can play around with this recipe and add other hearbs such as basil, thyme or cilantro. It is so tasty you can use it as a dip, a salad dressing, for your pita chips or as a topping for fish or even chicken. Enjoy!
Green Goddess Dressing
2 cups Greek Yogurt
2 avocados, peeled and pitted
1/4 cup fresh lemon juice
1 tsp kosher salt
1/2 tsp black pepper
3 cups Italian Flat Leaf Parsley- stemmed removed. Washed and dried.
1 large clove garlic, peeled
Method-Prep time 5 minutes. Total time- 10 minutes
- In the bowl of a food processor or a blender, add parsley, yogurt, avocado, lemon juice and half of the salt and pepper.
- Process until smooth and creamy. Taste for seasonings. Add more salt and pepper if desired. If mixture is too thick, you can add in more yogurt and lemon juice. Olive oil can also be added.
- Chill until needed. Cover with plastic.
