Date Bark Recipe

This easy dessert takes only a few minutes to make. Using only your microwave and freezer, this recipe makes a candy bar type "bark" that is a perfect snack or gift anytime you are craving chocolate.

Ingredients

  • 20 large fresh pitted dates
  • 1 cup dark chocolate chips
  • 1 cup shredded coconut flakes
  • 1 cup nut butter of choice peanut or almond
  • 1 tsp flakey smoked sea salt
  • 1 cup roasted almonds roughly chopped

Instructions

  • Open the dates in half to flatten. Arrange the dates as close together in between two sheets of parchment paper to create your "bark" base. Using a rolling pine, flatten the dates in between two sheets of parchment paper. Transfer the dates to a rimmed baking sheet lined with parchment. Set aside.
  • In a microwave safe bowl, melt the peanut or almond butter for 30 seconds in 15 second increments. Str in 15 second increments to distribute the heat. Pour the warm peanut butter all over the flattened dates.
  • Sprinkle with the coconut and chopped almonds.
  • Melt the chocolate in a microwave safe bowl for 30 -45 seconds stirring every 15 seconds. Once smooth, pour the chocolate in a thin layer over the dates. Use an off-set spatula to help spread the chocolate. Sprinkle the entire mixture with smoked flakey sea salt.
  • Place the tray into the freezer for 30 minutes. Break into shards and seal in a freezer safe container or a zip top bag. Store the "Date Bark" in the freezer for up to 3 months.
