Ingredients

  • 4 boneless pork chops
  • 1 tsp kosher salt divided
  • ½ tsp pepper
  • 1 tsp smoked paprika divided
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ cup light brown sugar
  • 3 TBSP unsalted butter plus extra for buttering the baking dish
  • 2-3 unit large granny smith apples cored and cut into wedges
  • 1 tsp canola oil

Instructions

  • Pre heat oven to 350 degrees. Butter a deep covered baking dish, set aside.
  • Place sliced apples ( with skins on) into the prepared baking dish. Sprinkle with 1/2 tsp Kosher salt, cinnamon, 1/2 tsp smoked paprika, ginger and brown sugar. Stir well to coat the apples with all the seasongs.
  • In a 12" skillet, over medium high heat, heat oil until just smoking. Sprinkle chops with remaining salt, pepper and 1/2 tsp smoked paprika.
  • Brown chops in hot oil on each side for 1-2 minutes. The chops will not be cooked through- we just want to brown them. Place chops and their juices on top of the prepared apples. Dot with butter.
  • Cover and bake 30 minutes at 350 degrees.
  • Serve with a roasted sweet potato or over white rice.
