Pre heat oven to 350 degrees. Butter a deep covered baking dish, set aside.
Place sliced apples ( with skins on) into the prepared baking dish. Sprinkle with 1/2 tsp Kosher salt, cinnamon, 1/2 tsp smoked paprika, ginger and brown sugar. Stir well to coat the apples with all the seasongs.
In a 12" skillet, over medium high heat, heat oil until just smoking. Sprinkle chops with remaining salt, pepper and 1/2 tsp smoked paprika.
Brown chops in hot oil on each side for 1-2 minutes. The chops will not be cooked through- we just want to brown them. Place chops and their juices on top of the prepared apples. Dot with butter.
Cover and bake 30 minutes at 350 degrees.
Serve with a roasted sweet potato or over white rice.
