What is Vanilla Bean Paste?

I am the founder and owner of Wild Montana Foods. We manufacture a line of premium vanilla products, with Vanilla Bean Paste being our best seller. We manufacture vanilla sugar, vanilla extract, vanilla paste and vanilla maple syrup.

How we make Pure Vanilla Paste:

Vanilla Bean paste is made by processing spirits like vodka, ever-clear, rum or bourbon with water, whole vanilla beans, sugar (or in our case- honey), and Xanthan gum which is a natural product that helps suspend the beans in the paste and thicken the mixture. An invert sugar like light corn syrup, honey or agave is used to prevent crystallization. Often we soak the beans in spirits for up to 2 weeks to further infuse the paste with extra vanilla flavor and to make processing the beans easier on our power blenders.

What kinds of beans are used in our Vanilla Bean Paste?

In Wild Montana Foods vanilla bean paste, we use up to four types of vanilla beans:

  • Papaya New Guinea V. planifolia– This is a very pliable bean perfect for processing in paste with cream, cherry and caramel notes. We use Grade A beans. Moisture content 15-25%.
  • Madagascar Bourbon Cure V. planifolia– the world’s most plentiful bean is rich with cream, butter and caramel notes. It is a very “vanilla” vanilla aroma. These beans are at least 13cm in length. We also use these beans in our vanilla extract. Grade A only. “Bourbon Cure” is a drying process and refers to the Bourbon Islands. These beans do not contain bourbon. Moisture content- 30-35%.
  • Uganda V. planifolia- Strong creamy and chocolate notes and loads of caviar make this a perfect bean for vanilla paste. Grade A only. Moisture content 30-35%.
  • We also occasionally use- Tahiti V. tahitensis beans. This is a thick and oily beans with loads of red wine, floral and sweet notes. This bean works very well with our honey vanilla paste. Grade A only. Moisture content 30-35%.

How to use vanilla bean paste:

We love to use Vanilla Bean paste in recipes like Crème anglaise, ice cream, vanilla pudding (or banana) , Pots de crème, vanilla soufflé, whipped cream, pastry creme, caramels. Any recipe where the little black specks of bean caviar are a visual cue that something vanilla is in the recipe is a perfect time to use vanilla bean paste. We also love to add Vanilla Bean Paste to our half & half to make our own vanilla coffee creamer.

We use organic vanilla beans:

Vanilla beans are grown in conditions where chemicals and fertilizers are not needed, but our beans are USDA certified organic. They are all hand pollenated. These beans are hand selected for their superior flavor components. Our supplier uses vanilla beans that are traditionally cured using the Bourbon curing method to develop the full, complex vanilla flavor made of over 200 organic compounds that artificial vanilla (Natural Vanilla Flavor WONF) cannot properly replicate.
