20 Minute Spicy Shrimp & Soba Noodles

Spicy Shrimp with soba noodles is a perfect summer weeknight dish that can be whipped up in about 20 minutes with little prep.

I cooked everything in the same pan to make clean up a breeze. In the summer, who wants to spend time inside in front of the sink washing pots and pans? No one!

For this super simple skillet, I used fresh medium size pre-shelled and deveined shrimp, chopped pineapple, garlic, red peppers and onions. Boil up buckwheat SOBA noodles for 45 seconds- no more. The sauce will continue to cook them through. In the same pan, make a tangy sauce of water, rice wine vinegar, red curry paste, soy sauce and honey. For seasonings, use Trader Joe’s South African Smoke Spice Blend. That’s it.

Sauté the veggies, add in the sauce, stir in the shrimp for 2-3 minutes, add the noodles and dinner is ready.

It’s sweet, kind of sour and oh so good.

Spicy Shrimp & Soba noodles

  • 4 oz. buckwheat SOBA noodles

  • 2 cups chopped fresh pineapple

  • 1 red bell pepper, chopped

  • 1/2 sweet onion, chopped
    1 garlic clove, minced

  • 1 lb medium shrimp, deveined, shells removed

  • 1 tsp Trader Joe’s Smoky South Africa Spice blend
    OR
    1/4 tsp smoked paprika, 1/4 tsp cayenne pepper, 1/4 tsp black pepper, 1/4 tsp crushed red peppers

  • 1/4 cup tamari or low sodium soy sauce

  • 1/4 cup water

  • 2 TBSP rice wine vinegar

  • 1 TBSP honey

  • 1 TBSP olive oil or sesame soil

  • For the table- chopped peanuts, Sriracha, mint leaves, extra soy sauce

  • 1 TBSP Red Curry Paste

Method- Serves 4, Prep time 10 minutes, cook time, 10 minutes

  • Cook SOBA noodles in a deep pan of boiling water for 45 seconds to 1 minutes. Drain immediately and rinse with cold water. Set aside in colander.
  • In the same skillet, heat oil on medium low heat. Satué the onions, peppers until just softened. Add in the garlic and pineapple. Stir gently. Stir in the spice blend to toast and bloom the flavors.
  • Add in the water, soy sauce, honey, Red Curry paste and rice wine vinegar. Over medium high heat, stir gently to create a thick sauce. Add in the shrimp and cook another 2-3 minutes until the shrimp are pink and opaque.
    Gently toss in the soba noodles and stir until coated with the sauce. Reduce heat to a simmer. Cover and cook for 1 minute .
  • Serve hot. Garnish with extra soy sauce, chopped peanuts, mint or Sriracha.

      This is so easy to whip up. It takes just minutes and the soba noodles are a nice break from orzo or rice.
